Clean the potatoes and bring to the boil in salted water, the cooking time depends on the size of the potatoes.
Meanwhile, boil the eggs hard, then peel them and separate the yolks from the whites. Cut the egg white into small pieces and place in a bowl. Add the quark, creme fraîche and chopped chives and mix everything well. Mash the egg yolks separately with a little mustard (about a teaspoon), oil (about a tablespoon), pepper and salt. When a homogeneous mass has formed, mix everything with the remaining ingredients and season if necessary. If you like the quark mixture a little more liquid, you can add a little milk. Other spices or herbs such as paprika or dill can be added as desired.
The whole thing is served with the hot jacket potatoes. Tastes good with smoked salmon or tomatoes from the oven baked with cheese. But we also like it very well on our own.
