Instructions

  1. Clean the mushrooms and cut into thin slices. Peel the onion and chop finely. Whisk the eggs with the cream, sunflower seeds and salt.
  2. Heat the clarified butter in a large pan and sauté the onion in it. Add the mushrooms and stir-fry until brown. Salt and pepper. Shift down to the lowest possible heat.
  3. Pour the whisked egg mixture over it and let it set for about 10 minutes with the lid closed. Cut the chives into small rolls. Halve the omelette, sprinkle with chives and serve on the plates with the salmon.
