Ingredients
Mushrooms – 1 kg
Olive oil – 4 tbsp
Garlic (crush with the flat surface of a knife) – 1 clove
Preheat oven to 200 degrees. Cut the mushrooms into 4 pieces and place them on a baking sheet covered with parchment. Toss with olive oil, garlic, lemon zest, juice, and anchovies. Season with salt and pepper. Roast in the oven for 35-45 minutes. Cool it down.
Add the parsley leaves to the mushroom mixture and chop using kitchen appliances until small pieces remain.
Toss the mushroom mixture with a spoonful of mascarpone or sour cream. Add salt and pepper if needed. Sprinkle with parsley, paprika, and drizzle with olive oil. Serve with toasted slices of homemade or Italian bread.
