Wash fresh mushrooms and, depending on size, quarter or cut into thick slices.
Put the olive oil in a saucepan, add the sherry, lemon and spices and sauté the mushrooms. Then add the tomato paste and now the herbs. (Don`t be so frugal with coriander and cloves, they can dominate a bit.)
Of course, remove the bay leaves before serving.
The mushrooms are a good starter or a small snack in between, then I serve toast with butter.
