Heat olive oil in a large pan, add the quartered mushrooms and sauté. The pan must be very hot when the mushrooms are added.
Heat the olive oil again in a second small pan. Then heat the diced onion together with the honey until it starts to caramelize. Then add the caramelized onions to the mushrooms.
Heat the mushrooms and onions vigorously and deglaze with soy sauce, then add the cream. As soon as the cream comes to the boil, add the grated Parmesan, reduce the heat and give the cheese time to melt. Then add the chopped chives and season with salt and pepper.
Add the gnocchi and stir in. Arrange on a plate and pour some more parmesan cheese and colored pepper over it.
