Clean and halve the mushrooms. Clean the vegetables and pull them into strips with a Julienne cutter.
Heat the oil in a pan, sweat the garlic and onion briefly in it, add the mushrooms and cook them over medium heat for about 10 minutes. Stir in the crème fraîche and season the vegetables with salt and pepper.
Heat the oil in a second pan and cook the vegetable strips over medium heat for about 10 minutes. The vegetables should retain some “bite”. Season with salt and pepper.
Place the vegetables in a nest on a plate with a fork and arrange the mushrooms in the middle.
