Clean, wash and halve the mushrooms. Finely chop the onion and sauté in oil with the garlic. Then pour in approx. 50 ml of water or broth. Add the mushrooms, stir well and cover everything and let simmer for about 10 minutes.
Dice the ham, peel and halve the tomatoes, remove the stalks and seeds. Roughly dice the pulp.
Add the ham cubes to the mushrooms and continue frying until all the liquid has evaporated. Season the dish with salt and pepper. Finally add the tomato cubes and heat. Serve sprinkled with the parsley
Whole grain pasta or whole grain rice go well with it
