Instructions

  1. Cook the noodles al dente.
  2. At the same time, finely dice half an onion and 1 clove of garlic and sauté in a little oil. Then add the washed, stalked and coarsely chopped spinach and let it collapse. Add the cream cheese and simmer a little. Season to taste with salt, freshly ground pepper and a little nutmeg.
  3. Finely dice the rest of the onion and the other clove of garlic and sauté in another saucepan with 1/2 tablespoon of oil and a pinch of sugar. Then deglaze with the tomatoes and bring to the boil briefly.
  4. Pour the tomato sauce into a baking dish. Fill the mussel noodles with the spinach and cream cheese mixture and place in the sauce. Scatter the grated mozzarella on top.
  5. Bake in an oven preheated to 200 degrees for about 15 to 20 minutes until the cheese is a little brown on top.
