Chop the debreziner, onion, bell pepper and spring onion into small pieces. Heat butter in a pan and fry the debreziner with the onion without browning the onion. Then add the peppers, whole tomatoes and spring onions and sweat everything nicely. The vegetables should not be fried too long so that they stay a little crunchy and retain their taste.
Then add the eggs, but don`t stir anything, the yolks should stay whole. Then sprinkle the grated cheese evenly over the top. Finally, season with salt and pepper, garnish with chives and serve with black bread.
