Clean the carrots and grate them finely, mix immediately with the lemon juice. Mix the cream cheese with the shredded carrots and season with salt and pepper to taste. Cut the freshly washed and dry-shaken chives into fine rings. Possibly set aside a few stalks for garnish. Stir the rolls into the cream cheese mixture. Now distribute the spread on the bread slices and cut them in half. Garnish with the chives. This also works with other vegetables such as peppers, zucchini, kohlrabi or radishes.
