Caramelize the sugar in a saucepan, then immediately deglaze with orange juice. Add the cinnamon, then add the nectarine wedges and simmer gently for approx. 3 minutes. Stir in the cornstarch and amaretto until smooth. Bring to the boil briefly, then add the raisins.
Arrange on dessert plates with an ice cream scoop and decorate with a little whipped cream.
