Pour hot water over the nectarines, let stand for a few minutes, peel off the skin of the fruit and remove the seeds. Cut the nectarines into small pieces and puree. Cut the melon into small pieces. Peel the peel from the lemons and cut into very narrow strips or peel off the lemons in zest. Squeeze 1 lemon.
Mix the nectarine puree with the melon pieces, lemon juice, lemon zest and preserving sugar in a saucepan. Bring everything to the boil while stirring and let it simmer for about 4 minutes.
Pour the spread hot into glasses, close them and turn them upside down for 5 - 10 minutes.
You can also use Galia or Charentais melon, but not watermelon!
