Instructions

  1. Wash, stone and chop the nectarines. Core the honeydew melon and also cut into small pieces.
  2. Puree the fruit pieces, add the Bourbon vanilla flavor, lemon juice and preserving sugar and mix well.
  3. Bring the whole thing to the boil while stirring and let it simmer over a high heat for 4 minutes. Add the rum (if you like).
  4. Pour hot into the jars and close immediately.
