- Wash, stone and chop the nectarines. Core the honeydew melon and also cut into small pieces.
- Puree the fruit pieces, add the Bourbon vanilla flavor, lemon juice and preserving sugar and mix well.
- Bring the whole thing to the boil while stirring and let it simmer over a high heat for 4 minutes. Add the rum (if you like).
- Pour hot into the jars and close immediately.
