- Bring the wine with the spices to the boil, simmer for about 10 minutes and then let cool down.
- You can also replace the wine with 150ml apple and redcurrant juice.
- Beat egg yolks with vanilla sugar until frothy, add mascarpone and rum (or 2-3 drops of rum flavor).
- Beat egg whites with lemon juice until stiff, fold into the mascarpone mixture.
- Cut the breakfast cake into finger-thick strips.
- Spread half of the cake strips in a tin. Drizzle with half of the mulled wine or juice and brush with half of the mascarpone cream.
- Repeat the whole thing and put everything in a cool place for at least 6 hours (better overnight).
- Brown the almonds in a pan without fat and leave to cool.
- Dust the tiramisu with cocoa and garnish with the almond flakes.
