Instructions

  1. Cut the cress off the bed and set it aside for the time being. Remove the avocado from the skin, remove the stone and cut the pulp into slices. Drizzle with lemon juice and season with a little salt and pepper. Either poach the eggs until they are waxy in vinegar water or boil them normally and then peel them and cut them into slices.
  2. Toast the toast in the toaster, brush with butter and grind a little salt and pepper over it. Cover with the avocado slices, sprinkle a few chilli flakes over them, put an egg on each, sprinkle the cress over them and grind with a little pepper.
