Bitter lemon, bitter orange and the grape juice (everything is well chilled) are poured into the bowl. Then the fruits are drained, the juice being collected separately. The mandarins go straight to the punch, whereas the peaches are cut into small pieces beforehand.
Finally, the most important thing is to season the punch with the captured juices. At first, the punch tastes quite tart. By adding the juices, this is compensated for by the sweetness. I always tasted it so that the bitter taste, the sweetness and the sparkling carbon dioxide were finally well balanced.
