Wash the potatoes and cook in water for about 25 minutes. Drain, quench, peel and let cool.
Peel the garlic and onion. Chop the garlic, cut the onion into strips. Clean the peppers and cut into large pieces. Divide the sausages into 3-4 cm long pieces.
Roughly dice the potatoes.
Heat the clarified butter in a large pan. Fry the peppers over a medium heat for 3-4 minutes. Add onions, garlic, sausage and potatoes to the pan and fry for about 10 minutes. Season to taste with the spices.
Wash parsley, shake dry and chop. Mix with the sausage pan and serve.
