Remove the stalk from the cleaned red cabbage, cut into very fine strips or use a coarse rasp and first loosen / separate the strips in a salad bowl, then carefully mix with the salt. Let the red cabbage steep for about 5 minutes.
Meanwhile wash the spring onions, carrots and apples. Cut the spring onions into fine rings and coarsely grate the apple and carrot.
When the steeping time is over, add the spring onions, apple and carrot to the red cabbage and mix everything together. Now grate the walnuts finely directly over the salad. If larger pieces fall off, it`s not wild, it still gives some bite.
Add the balsamic vinegar and oil. Better to take a little less first, the salad shouldn`t drown in it. I do it more by feeling. Add the lemon juice and mix everything again carefully. Season the salad with a little sugar.
A delicious, refreshing side salad is ready, e.g., for a main meal, for grilling, with some cheese as a wrap, in pita bread etc.
