Finely puree the egg yolks, milk, baking powder, oat flakes, cinnamon and / or vanilla with a hand blender. Sweeten to taste. Then beat the egg white until stiff and fold into the oat mixture.
Preheat a small pan with a little oil. Pour the mixture into the pan and turn the stove on to the lowest setting. Fry on one side until nicely brown, then turn. For me, the mixture is enough for 3 pancakes in the small pan of 18.
Do not make the pancake too thick, otherwise it may not be completely through.
For this you can e.g., Eat fruit or maple syrup.
The pancakes are really super fluffy and aromatic.
