Instructions

  1. Separate the egg. Beat the egg yolks and sugar with the hand mixer until creamy. Stir in the mineral water and yoghurt, then fold in the flour and oat flakes and let the dough swell for about 15 minutes.
  2. Peel and quarter the pear and remove the core. Cut the pulp into pieces. Peel the orange, divide it into segments and cut them into pieces as well. Rinse the grapes and cut them in half if necessary. Squeeze the lemon. Mix together lemon juice, honey and cinnamon and mix with the fruit.
  3. Beat the egg whites until stiff and fold carefully into the batter. Heat the oil or butter in a pan and add small portions of dough to make cakes the size of the palm of your hand. Bake the cakes until golden brown on both sides and serve with the fruit salad.
