Instructions

  1. Peel and halve the onion and cut into thin slices. Finely chop the clove of garlic and roast with the onions in a pan in a little olive oil for a few minutes. Add the curry and stir-fry for a few minutes.
  2. Wash the okra, cut off the stem and tip and add to the pan. Stew everything for a few minutes with the lid on. Cut the peeled tomatoes into cubes and add the juice from the can to the pan, as well as the can of coconut milk. Lightly salt everything and stir well. Simmer half covered over medium heat until the okra are nice and soft (about 25 minutes). Season to taste with salt, curry and lemon juice.
