  1. Peel the potato tubers. Rinse the peeled potatoes and cut them into small neat cubes.
  2. Transfer the sliced ​​potatoes to a large saucepan and cover with water (2 L).
  3. Place a pot of potatoes over high heat. When the water boils, add salt to your liking. Reduce heat and cook potatoes for 15 minutes, until tender.
  4. Then place the pot with potatoes in a large bowl filled with cold water. If you have time, the potatoes can be left to cool just on the stove. Do not drain the potato broth, we still need it.
  5. While the potatoes are cooling, prepare the other ingredients. Dip the eggs in cold water and put on high heat. When the water boils, reduce heat and cook the eggs for 10 minutes. Then drain the boiling water, pour the eggs with ice water and let them cool. Peel the cooled eggs from the shell. Separate the yolks from the whites, cut the whites into small cubes.
  6. Remove the skin from the smoked chicken fillet. Cut the fillet into small cubes. (For okroshka, you can use any part of smoked chicken, but it is the fillet that is most conveniently cut into neat cubes.)
  7. Peel the fresh cucumber (or leave, if not essential) and cut first into thin slices, then into small cubes.
  8. Rinse greens (green onions, dill, parsley), dry, chop.
  9. Combine the chopped ingredients in a large bowl: smoked chicken fillet, cucumber, egg whites, herbs.

  10. Transfer the chopped and mixed ingredients to the cooled potato broth with potatoes.
  11. Grate the egg yolks with a fine or coarse grater.

  12. Add sour cream to okroshka. Stir.
  13. Pour some liquid from okroshka into a bowl and mix with citric acid. Stir to dissolve the lemon crystals.
  14. Pour the dissolved citric acid into a saucepan with okroshka.
  15. Stir. Put okroshka in the refrigerator for 2-3 hours so that it infuses and cools properly.
