Cut the bacon into larger cubes. Debark the bread and cut into pieces. Whisk eggs and milk together, season with a little salt and pepper. Fry the bacon in a pan in hot oil over low heat. Add the bread cubes and fry. Pour the egg milk over it, put the lid on and let the omelette set over low heat.
If the omelette needs to be turned, slide it onto a large lid, turn it back into the pan and let it set.
To serve, sprinkle the omelette with coarsely chopped basil.
