Peel and dice the onions and fry them in a little oil. Chop or squeeze the garlic clove and fry briefly. Add the spinach and pasta and deglaze directly with the vegetable stock and cream and season to taste (I used salt, pepper and herbs). Bring to the boil briefly and then simmer over low heat for approx. 15 - 20 minutes until the noodles are cooked;
After serving, rub a little parmesan on top and you`re done.
