Instructions

  1. The ingredients are listed in the order in which they were prepared.
  2. Bring the water to a boil in a suitable sized saucepan with a lid.
  3. Cut the tomatoes crosswise, briefly add them to the water, remove them and peel them. Cut out the stems and cut the pulp into small pieces. Alternatively, use peeled canned tomatoes with the liquid.
  4. Season the cooking water with the grained vegetable stock, add the macaroni and turn back, stir. Peel and dice the onion and add. Peel the garlic and press it through the garlic press. Cut the zucchini into cubes and add the chopped tomatoes, stir. Crumble the dried chili peppers between your fingers and add. Caution, possibly use gloves, because of the sharpness. Add basil paste or pesto and basil leaves, roughly chopped, and stir. Season with salt and pepper. Cook everything until the noodles are firm to the bite, then pull them off the plate.
  5. Now stir in the grated Parmesan and cream cheese until the liquid has the desired consistency. Refine with cream and season to taste.
  6. Arrange on plates and serve garnished with basil leaves.
  7. Tip, vary with vegetables depending on the season, e.g., mushrooms, peas, peppers, broccoli, spring onions. For the festive version, add 200 g of shrimp or salmon.

  9. In our own experience and several attempts, your favorite noodles taste better when they are put into the boiling liquid. Then turn back the hotplate, add the remaining ingredients and stir from time to time. Depending on the type of pasta and the quality, the amount of liquid may have to be increased during cooking. If there is still some liquid in the pot at the end of the cooking time, you can thicken it with Parmesan cheese and / or cream cheese.
