Wash oranges and grapefruit with hot water and peel them, completely removing the white, bitter skin. Cut the pulp into small pieces. Cut the peel of three oranges and half a grapefruit into very fine strips after it has been completely freed from the white skin.
Mix the fruits, the peel and the preserving sugar and bring to the boil. Let it simmer for four minutes. Pour in the whiskey, stir. Pour the jam into the prepared jars while still hot and close them.
