Finely dice the ingredients and coarsely dice the carrots. Heat sunflower oil. Briefly sauté shallots, garlic and ginger, add carrots and peppers and sauté for a few minutes. Add the spices and broth, then cook for about 25 minutes. Then pour in coconut milk and orange juice, puree, strain and add Vega légère. Season to taste at the end.
Tastes a bit exotic but very good. Also for the party.
