Mix rice flour with some cold orange juice; Bring the rest of the orange juice to the boil, stir in the mixed rice flour and coarsely ground cardamom seeds *, simmer gently for 5 minutes, then chill. Loosely fold in the quark, whipped cream, honey and orange zest. Fill into portion glasses or bowls, chill for another hour and garnish with orange fillets.
* If you can`t get cardamom seeds from the spice dealer, buy green cardamom pods and then have to seed the seeds yourself.
For a change: replace cardamom with 1 teaspoon of fresh, grated ginger. Can also be used as a filling for biscuit roulade.
