Airy sponge cake with zest, orange juice, and orange sugar icing is an easy-to-make baked product that will delight even the gourmet with its taste. Ingredients
Butter – 100 g
Orange – 300 g (juice – 100 ml + zest – 1 tablespoon)
Eggs – 2 pcs.
Wheat flour – 150 g
Baking powder – 1.5 teaspoon
Sugar – 140 g
Vanilla sugar – 1 teaspoon
Salt – 1 pinch
Vegetable oil (for lubricating the mold) – 1 teaspoon
Prepare foods from the list. Remove eggs and butter from the refrigerator ahead of time to warm to room temperature.
Melt the butter in a water bath or microwave and cool completely. Remove the zest from the orange using a coarse grater. Squeeze the juice out of the orange. For the dough, you need 100 ml of juice. Save the remaining juice for making the icing (I got only 120 ml of juice).
Turn on the oven to heat up to 180 ° C. Combine eggs, sugar, salt, and vanilla sugar.
Beat eggs with sugar with a mixer on low speed for 5-7 minutes. The sugar should almost dissolve and the mixture should lighten.
Continuing to beat the mixture, pour in the cooled melted butter in a thin stream. Beat the mixture for another 1 minute.
Mix flour with baking powder and sieve portions into a bowl of egg-butter mixture, whisking the dough with a mixer at low speed.
Add orange juice and a tablespoon of orange zest to the dough. Mix everything thoroughly again.
Grease a baking dish with a thin layer of vegetable oil and line with baking paper. Pour the dough into a mold and spread evenly. I am using a form measuring 25x11x7.5 cm.
Place cake in preheated oven and bake for 30-35 minutes, until golden brown. Check readiness with a wooden skewer. If the skewer comes out dry, it’s done. Leave the cake in the pan for another 10 minutes.
In the meantime, prepare the frosting. Combine powdered sugar, juice, and orange zest.
Mix everything thoroughly.
Remove the cake from the mold, pour over the prepared icing and, if desired, sprinkle with the remaining zest.
