Instructions

  1. Butter molds or cups lightly.
  2. Wash the oranges with hot water, dry them and finely rub the peel of one fruit. Squeeze out the juice of both fruits and reduce to 2 tablespoon.
  3. Bring the milk to the boil, stir in the semolina and bring to the boil again. Pour the semolina into a bowl and let it soak for 5 minutes, stirring occasionally. Meanwhile separate the eggs. Beat the egg whites with salt until stiff. Let the sugar trickle in while still beating. Quickly stir the egg yolks with the orange peel, orange juice and honey into the hot semolina, then fold in the egg whites.
  4. Pour the mixture into the molds, immediately cover with cling film and allow to cool completely.
  5. Arrange on a fruit mirror or decorate with chocolate sauce.
