Instructions

  1. Halve the orange. Cut out a thin slice and save for garnish. Squeeze the rest of the orange.
  2. Peel and dice the onion. Fry in hot oil. Then peel the ginger and add it in one piece. Peel the carrots and potatoes and cut into even pieces. Also add and sauté briefly. Then deglaze with the orange juice and add enough water to just cover the vegetables.
  3. This makes the soup very thick - if you like it really liquid, you can add a little more vegetable stock instead of water.
  4. Bring everything to the boil once and then let it simmer until everything is cooked through. Find the piece of ginger and puree the soup. Season to taste with salt, pepper, ground cumin and a little cardamom.
  5. This is then decorated with a dollop of sour cream or cream, freshly ground pepper and a corner of the orange slice that has been set aside.
