Instructions

  1. These tender waffles are prepared according to an American recipe, have a very pleasant orange aroma and are very suitable for breakfast as a start into the morning. The jam syrup is delicious. If sweet, juicy blood oranges are available, they add a nice color accent to the dish.
  2. Peel the zest off the orange (1 tablespoon amount). Squeeze the oranges.
  3. For the syrup, gently heat the jam, half of the orange juice and 1 teaspoon of lemon juice in the sauté pan until the jam starts to melt.
  4. Mix the dry ingredients flour, wheat bran, baking powder, baking soda and ¼ teaspoon salt in a bowl.
  5. Up to this point everything can be prepared hours in advance.
  6. Melt 6 tablespoon butter. Heat the waffle iron. Separate eggs, whip egg yolks until frothy. Add the yogurt, orange zest, the other half of the orange juice, sugar, nutmeg and melted butter. Gradually fold in the flour mixture, stir until the ingredients are just blended.
  7. Beat the egg white until stiff and fold the firm egg white foam into the dough. Put the dough in portions in a heated waffle iron and bake until golden brown.
  8. If necessary, heat the syrup again. Serve waffles with syrup.
