Quarter the onion and cut into fine strips. Cut or press the garlic into small pieces. Add to the salad bowl with oil, harissa paste, lime juice, pepper and raisins and mix well. Let it marinate for about 30 minutes, but longer if you like.
Cut the cucumber and carrots into small pieces or cubes. The smaller the better - the ratio should be 1: 1. Wash the coriander and cut into strips.
Prepare the couscous according to the instructions on the packet.
Tip: add more salt to the cooking water - no need to add more salt.
Put the couscous, cucumber, carrots and coriander in the salad bowl, add the pepper, tomato and tomato paste. Mix well and add extra olive oil or salt if necessary. Let it steep for at least 1.5 hours and stir occasionally.
