Peel the oranges, also remove the whites. Cut into slices or pieces and arrange nicely on a platter. Cut open the pomegranate, carefully remove the seeds (be careful, mess!) And sprinkle over the oranges.
Mix the apple cider vinegar with the brown sugar and stir until the sugar has dissolved. Add some squeezed orange juice and pour the dressing over the oranges and pomegranate seeds.
Sprinkle with pistachios, let them steep briefly and serve. A scoop of ice cream (preferably orange ice cream or Amarena) also goes with it.
