Instructions

  1. For the dough, separate the eggs and beat the egg whites until stiff. Add the sugar, stir in and set aside.
  2. Melt the butter briefly in the microwave.
  3. Mix the egg yolks with the milk and cream in another bowl. Then stir in the salt, vanilla extract and melted butter. Sift the flour over it, stir in and fold in the egg whites with a spatula.
  4. Preheat the oven to 180 ° C top / bottom heat.
  5. Put some oil in a non-stick pan measuring 26 cm and heat it over a medium stove setting. It is also important to ensure that the pan handle is heat-resistant. When the oil is hot, add the batter to the pan and turn back the stove setting a little. Bake the pancake for about 3 minutes, it should have a light brown color on the bottom. Now place the pan in the preheated oven and bake the pancake for another 10-12 minutes. The dough should be nice and airy and baked.
  6. Once the pancake is in the oven, prepare the filling. To do this, clean the strawberries, remove the stems and cut them in half.
  7. Melt the butter in a small saucepan, add honey and sugar and bring to a boil. Add the strawberries, lemon juice and cinnamon. Bring to the boil while stirring briefly and set aside.
  8. When the pancake is ready, turn it off the pan and onto a plate. Cover one half with the strawberries and fold the other half of the dough over it. Dust with icing sugar if you like and serve. The amount makes 2 - 3 servings.
