Wash the oyster mushrooms and carefully rub dry with kitchen paper. Peel the carrots and cut into thick slices. Peel the shallot and garlic. Cut the shallot into wedges, finely chop the garlic.
Heat oil in a pan. Fry the shallot and garlic in it. Add the carrots and oyster mushrooms and stir-fry all over. Fry for about 10 minutes and season with salt and pepper.
Wash and roughly chop the parsley. Add the creme fraiche to the pan and serve hot.
