Instructions

  1. First the omelette is prepared. To do this, whisk the first 5 ingredients together and fry them in a pan with a little butter or oil to make an omelette. The amount given above results in 2 pieces. When the omelettes are ready, keep warm.
  2. Then mix the sauce for the noodles from the soy or fish sauce, the tamarind paste, the vinegar, the brown sugar, the chicken stock, the water and the milk, and leave to stand.
  3. Whichever ingredient you have chosen as the main side dish, i.e. cut tofu, chicken or other meat into small pieces and marinate with a sauce made from the following ingredients in a small bowl: turmeric powder, paprika powder, ginger powder, salt, pepper, water. Then let it take effect.
  4. Soak the Thai rice noodles in warm water for 10 minutes. Meanwhile, peel the spring onions and chop the garlic. Wash the fresh sprouts or, if there are no sprouts available, wash the Chinese cabbage and cut into fine strips.
  5. Heat a pan with peanut oil or regular oil on the stove. Fry the tofu or meat. Add the onions and garlic. Then also add vegetables, for example some of the fresh sprouts, mushrooms or bamboo shoots.
  6. After everything has been steamed a little, add the pasta. Put the previously mixed soy sauce, chicken broth, tamarind, etc. into the pan and let everything simmer until the sauce is absorbed by the noodles.
  7. Spread out the omelette, divide the amount of the pan between both omelettes and close the omelette. Then put some of the fresh sprouts or sliced Chinese cabbage, chopped peanuts and half a lime on the plate.
  8. You can also add a little balsamic cream to the omelettes for decoration before serving. Tastes very refreshing and is quite light.
