- Halve the pak choi lengthways. Cut the chilli and garlic into thin slices. Do not chop both the spring onions and the onions too finely.
- Heat the oil and fry the pak choi briefly, then fold in all the other ingredients and season with the soy sauce, balsamic vinegar and ginger.
- Cover and simmer for approx. 15 minutes.
