Whisk the eggs and stir in half to two thirds of the fresh coriander.
Fry the onions lightly brown in a little oil in a non-stick pan. Now add the tomatoes and season with salt, pepper and the Hot Chili Powder (you can get the Hot Chili Powder in the Asia shop - be careful!). Simmer gently over medium heat until the tomatoes crumble completely, if necessary add a little water in between. Now add the peppers, garlic and ginger and braise for about 3 minutes.
Add the eggs, stir everything well and let the eggs set, sprinkle with the remaining coriander and serve hot.
The best way to do this is to eat fresh flatbread or rolls.
