Cut the pork schnitzel into fine strips. Peel the onions and garlic cloves. Cut the onions into rings, mash the garlic. Mix both with the meat strips, oil, curry powder, salt, pepper, paprika powder and gyros spice and marinate in the refrigerator for about 1 hour.
Clean, wash and slice the spring onions and add to the marinated gyros. Fry vigorously in a hot pan for about 10 minutes while stirring. Season the pan gyros with the spices. Wash the parsley, chop it finely and sprinkle over it.
Serve with fresh seasonal salad and baguette, if desired.
