Quarter the zucchini and carrots and cut into thin slices. Halve the pepper, remove the seeds and the separating membranes, then cut into thin strips. Drain the mushrooms.
Brush the pan with the olive oil and fry and season the vegetables in it. Then add the bulgur and fry briefly. Deglaze everything with vegetable stock and add sambal oelek. Season a little more and let simmer until the broth is completely gone. Stir every now and then.
Just before the end, add the herbs.
