Beat the eggs and whisk together with salt, pepper, cream and the Italian herbs.
Heat the sunflower oil in a medium-sized pan and bake half of the egg mixture into a pancake. Remove and bake a pancake from the second half of the egg mixture. Let it get cold.
Divide the two pancakes into 8 pieces each. Cover each piece of cake with 1 slice of Parma ham and 1 basil leaf each and roll up from the tip to the broad side. Pin with 1 wooden skewer and serve.
