A very interesting and delicious dessert can be prepared from thin pancakes with delicate apple filling, baked under an air cap of an elegant meringue.
Let’s start making pancakes. Pour milk into a bowl, add flour, salt, add sugar.
Add eggs, add vegetable oil.
Mix with a mixer until the lumps disappear completely.
Heat a pancake pan over maximum heat (I have a pan with a diameter of 18 cm). We will bake pancakes for one minute on each side.
We will lay out the finished pancakes on a wooden surface. You will need 15 pancakes.
Let’s prepare the filling and filling. Peel the apples and grate them on a coarse grater.
In a skillet over low heat, melt 45 g of butter and add 60 g of sugar. Let’s mix.
Put the grated apples in the pan. We will simmer them over low heat for 15 minutes, stirring constantly. The filling is ready.
Divide the three eggs into yolks and whites. Put the yolks in a container (the whites will be needed a little later), add sour cream, add 20 g of sugar.
Let’s mix. The fill is ready.
Put 2 tablespoons of apple filling on the edge of the pancake.
Roll the pancake into a tube. This will form 10 spring rolls.
Let’s take a square shape (I have a shape measuring 18×18 cm). Lubricate the bottom and walls of the mold with butter. Lay out four pancakes with an overlap, as in the photo.
Put five spring rolls on the bottom of the prepared form.
Pour half of the fill on top, evenly distributing it with a pastry brush.
Lay out five more pancakes with the second layer and pour the second part of the fill on top.
We wrap the hanging edges of the bottom pancakes, put another pancake on top and bake for 20 minutes. I use a glass mold, so I put it in a cold oven and turn it on to 180 degrees.
Beat whites from three eggs and 100 g of sugar with a mixer until stable peaks.
After 20 minutes of baking, remove the form from the oven. Put the resulting protein mass on top and send it back to the hot oven for about 20 minutes.
Now you need to wait until the meringue is browned, and you can get the finished dessert out of the oven.
Pancakes with apples, baked under the meringue, slightly cool and serve.
