Instructions

  1. Season the pangasius fillets with sea salt and the colorful pepper. Place in an ovenproof baking dish (pan).
  2. Mix the cream with enough lemon juice until it becomes creamy. Stir in the egg yolks, garlic and basil. Season to taste with salt and pepper. Fold in the lightly mashed Chakalaka chips.
  3. Spread this mixture on the fillets and place the mold in the oven preheated to 200 degrees, 2nd rail from the bottom, for 20 minutes. Finally, turn on the grill.
  4. Toast, rustic white bread or baguette go well with it.
