Tear the ciabatta into bite-sized pieces. Drizzle with olive oil and season with salt and pepper. Place in a baking dish and roast in the oven at 175 degrees for 10 minutes.
Peel and chop the onions. Soak half of the basil in a little oil. Mix with the onion pieces and sauté in a pan until translucent.
Chop the tomatoes and the sun-dried tomatoes. Wash the rocket and place in a bowl with the tomatoes and onions. Season the tomatoes with salt, pepper and the remaining basil and add. Mix the bread into the salad just before serving so that it stays crispy.
The salad tastes good as a grill side dish. The bread can also be toasted on the grill.
