- Cook the potatoes in their skins until cooked.
- In the meantime, cut the cucumber into slices and dice the onions. Both
- put in a bowl. Add the oil, vinegar, mustard, sugar and cucumber stock and stir well.
- When the potatoes are ready, peel and slice them and add them to the bowl as well.
- Now bring the water to the boil, add the vegetable stock and stir. Then pour this broth over everything and mix vigorously.
- Season to taste with salt, pepper, sugar and possibly vinegar.
