Instructions

  1. Dice the dried tomatoes. Bring the semolina to the boil with the water and stir until a lump loosens from the bottom of the pot. Remove from heat and mix with the parmesan, egg, diced tomatoes and parsley. Season to taste with salt and pepper.
  2. Cut off portions of the dough with two spoons. Let it steep in gently simmering water for about 10 minutes.
