Mix the flour, 100g parmesan, baking powder, sugar, salt and pepper in a bowl. Scatter the butter in flakes over it and knead into the flour mixture with your hands. Pour in the milk and knead into a smooth dough. Place the dough on a floured work surface and roll out about 1.5 cm thick.
Cut out circles approx. 5 cm in diameter, I use a drinking glass for this. Place on a baking sheet lined with baking paper. Brush with the melted butter and sprinkle with the rest of the parmesan. Bake for about 15-20 minutes on the middle rack with top / bottom heat until they are golden brown.
The small rolls are eaten fresh, often even lukewarm. They taste best for me with a hearty topping.
