Mix the curd cheese, breadcrumbs and melted butter and season with a little salt. Whisk eggs, herbs and 50 g parmesan well, fold into the curd mixture and let rest for 5 minutes. Shape the mixture into 8 dumplings and boil them in lightly salted water for 10 minutes.
Take the dumplings out of the water and roll them in the rest of the parmesan. Serve with basil cut into strips.
