Instructions

  1. Finely dice the onions and chop the garlic. Cut the bell pepper into small strips and the carrots and zucchini into cubes. Fry the vegetables in a saucepan with olive oil, add the paprika and fry briefly. Deglaze the vegetables with the broth and add the tomatoes. Season with salt and pepper. Now add the pasta and cook everything for about 5 minutes. The pasta should not be cooked through!
  2. In the meantime, halve the chorizo lengthways and cut into slices and add to the pasta. Put the pasta mixture in a baking dish, cut the mozzarella into slices and spread over the pasta.
  3. Bake at approx. 160 degrees for 30 minutes. I always turn on the grill function for the last few minutes so that the cheese is nice and crispy.
